Is the keel capable of supporting the yacht’s weight?: Yes, on pretty much every production boat ever.
The prop and rudder do not protrude below the keel, as you should know yourself.
The rest you'll have to measure, none of these are items listed on any datasheet. Others don't apply to your boat (no mizzen mast and only one prop).
Centre of gravity and such you really won't be able to figure out.
This whole form seems mostly an insurance blame assigning exercise so if they do drop the boat or it's damaged in transit, they can claim they weren't supplied with this data and it was all your fault instead of their lifting crew, which should know how to lift a yacht anyways - most(!) boatyards do.
