We installed magnetic door stoppers for the head's door (upper corner) with the adhesive 3m pads. It worked perfect for one season until it didn't stick anymore in the first winter. I will screw it on next week.
The same stopper is fitting in the aft cabin but it's too short for our front cabin door.
Good question about the fridge gasket. Cold air is heavier than warm air so I think it will not loose too much energy without a gasket. Warm beer is an issue :)

My vote goes for the magnetic latches, we have used them for many years including some rough stuff and never had the loo doors slam. Geoff

On our 2001 boat the bathroom GRP mould is backed with a thick plywood bulkhead on the engine side. I see you have an inspection hatch there, so you can just open it and look if that's also the case. If so, no problem drilling and screwing on a better latch.
Would definitely add a seal to the fridge, else a lot of moist air will get in and end up as frost on the evaporator. Looks like a foam seal would work best. A compressible D or P shaped rubber profile might also work and provide a better seal, but leave the fridge lid sticking out a bit more.
