The woods used vary hugely in colour and grain. Sapele was used extensively but in its natural state will vary, so the factory will choose the colour to get an even appearance from the timber that is available at the time. It is true that the pre 2003 boats used darker woods but were still from the Sapele family.
You will find if you go shopping for wood you will find wide variations so you have to look through and find a match. You can use wood dyes such as Colron to vary the colour, although obviously more to darken rather than lighten.
In my 2001 37 I used a lot of basic mahogany to make book shelves and racks for mugs, spices etc and managed to blend it in well by using a satin varnish finish. I also managed to get a piece of sapele veneered ply to match when adding a shoe locker in the forecabin.
In my current 2015 33 I bought matching mouldings from the factory via Clipper to make book shelves, but I have also used both teak, iroko and mahogany which also blends in well with the lighter trim used on current models.

www.kjhowells.com who has a good stock of a variety of timbers, often offcuts and I root around for bits I know I can get to blend in by using a mixture of dyes and finishes.
