I like to replace my woos panels in my Bavaria 42, 2000.where can I find the name of wood type (Oak? Cheder? ,and where can I get
the material to cover the plywood.

Yes, it is sapele. You can but sheets of 4 or 6mm faced ply or if you want thicker ply, sheets of 0.5mm sapele veneers to glue onto thicker ply from
